Cây cà ri, có tên khoa học là Murraya koenigii (L.) Spreng, được sử dụng làm chất tạo hương vị trong nhiều món ăn và có tiềm năng sử dụng trong điều trị bệnh do chứa các hợp chất flavonoid, steroid và phenolic. Các hợp chất này thể hiện đặc tính chống oxy hóa và kháng khuẩn. Trong bài viết này, quá trình chiết xuất từ lá Murraya koenigii (M. koenigii) đã được tiến hành bằng kỹ thuật ngâm với dung môi methanol 96% trong 7 ngày. Dịch chiết sau đó được phân tích bằng phổ UV-Vis, FT-IR cùng với phương pháp sắc ký lỏng hiệu năng cao ghép khối phổ (UHPLC-Q-TOF-MS/MS). Kết quả cho thấy một số hợp chất trong dịch chiết lá M. koenigii đã được xác định chủ yếu là flavonoids, alkaloids, terpenoids và hợp chất phenolic. Kết quả nghiên cứu này cung cấp một phương pháp phân tích hiệu quả để xác định nhanh chóng và chính xác cao thành phần hóa học các chất và đặt nền tảng cho các nghiên cứu trong tương lai về các loài Murraya khác được trồng ở Việt Nam.
